Sweet broad beens

back to recipes

back to desserts

The sweet broad beans are made with almond flour obtained in the following manner: grind together 200 gms. of unblanched almonds and the same quantity of sugar. It is necessary to grind them together so that the oil which comes out of the almonds is not wasted but absorbed by the sugar. When you have a nice fine flour, pass it through a sieve and mix with 100 gms. of white flour, 1 whole egg, the grated rind of half lemon and half teaspoon of powdered cinnamon. Mix the past well, divide it into little pieces which should be formed into the tipical oval shape and flattened, place them on a well-buttered baking tray and bake in a hot oven for about half hour
