  Boil 100 gms. of rice in some boiling milk, drain when cooked and mix together with 50 gms. of sugar, 1 egg, the grated rind of a lemon, a pinch of cinnamon and a handful of raisins. Now prepare a soft butter with 100 gms. flour, 20 gms. yeast, 2 tablespoons of sugar and half glass of milk. Mix the butter well and leave to rise for a couple of hours. Afterwards mix the rice with the butter and leave again to rise for another hour. Pour some oil into a large frying pan and when it is nice and hot, fry a few tablespoons of the butter at a time. Dust the fritters with some icing sugar and eat them eather hot or cold
