Roman saltimbocca     (Fried veal slices with ham)

back to recipes

back to meat plates

Buy some thin slices of veal - 2 slices per person - each weighing about 50 gms. Sprinkle over some salt and place on each slice one small slice of raw ham and a sage leaf. Now roll up the veas slices and pierce each with a toothpick. Put each saltimbocca in a pan containing butter and oil and place on the heat, then dilute with a cup of white wine and leave to cook on a rather high flame
